How about holding your own Midsummer Celebrations this weekend?
- Remove crusts, & line a 900 ml pudding basin, or small ramekins with the bread.
- Cook the fruit with 2 tbls water, until the juice runs & the fruit is soft but still retains its shape, then add sugar to taste.
- Fill the lined basin with the fruit & cover with a lid of bread. Cover with cling film, then place a tightly fitting plate or saucer on top, & press down with a weight.
- Leave overnight in the fridge. Turn out just before required, & serve with cream or Greek yoghurt.
Pay attention to this season & create a 'breathing space' to promote rest in your life.
