One of the many things to celebrate in the summer is the wonderful variety of soft fruit available to us. While strawberries & raspberries may be coming to an end, we are still in mid- blueberry season, and so can take the opportunity to use this delicious fruit in something delectable! So let's get out cook books, search the internet.....or try the recipe below......
For the pastry:
4oz/125g butter, chilled
5oz/150g plain flour
1oz/225g icing sugar
4oz/100g cream cheese (low fat is fine)
2 fl oz/50ml sour cream
1 lemon, zest & juice
caster sugar to taste
a little nutmeg
1 1/2 lb/700g blueberries (fresh or frozen)
2 oz/50g caster sugar
Gently heat the blueberries in a pan to release their juice, and are soft but not mushy. Strain off the juice, add the sugar, & cook until syrupy. Replace the berries & cool.
Spread the cream mixture in the flan base, & then cover carefully with the berry syrup.
Chill, then enjoy!
